Pickled carrots Algarve style
Ingredients for four persons:
500 g of carrots
5 cloves of garlic
some parsley
paprika
Erva doce
one deciliter of vinegar
salt and pepper
Preparation:
The carrots are washed, peeled and boiled whole in salt water. Once the carrots are cooked, they are left to cool and cut into slices not too small.
The garlic cloves are peeled and minced.
In a bowl are added the carrots and garlic. Add to that the spices like rose paprika, erva doce, salt and pepper as well as the vinegar. The parsley is also minced and sprinkled over it.
Put the carrots for a few days into the fridge
